Brownie ala Chef Cha

Ingredients: (Chef Cha)
  • 5oz – Chocolate Chips (melt)
  • ½- Cup Butter (melt)
  • 1 Cup- Sugar
  • 2tbsp- Cocoa Powder
  • 3-Eggs
  • 1tsp- Vanilla
  • ¾ Cup Flour
  • ¼ tsp. Salt Cashew Nuts Garnish
I took the Ultimate Brownie recipe online. It is tall like a cakey-brownie, but is dense like a fudgy-brownie. I'm sure it will be one of your favorite brownie recipes too.

Ingredients: (The Ultimate Brownie)
  • 8- 1 ounce squares of unsweetened chocolate
  • 1 cup butter
  • 5 eggs
  • 3 cups sugar
  • 1 tablespoon vanilla
  • 1-1/2 cups flour
  • 1 teaspoon salt
  • 2-1/2 cups chopped pecans or walnuts, lightly
Directions:
  • Step 1 - Melting Chocolate. Of course, just like any other recipe, begin by greasing the pan and preheating the oven. In this case, it's to 350 degrees F. or 325 degrees F. for dark metal and/or glass pans. The next step is to melt 8 ounces of unsweetened chocolate and 1 cup of butter over low heat.
  • Step 2 - Toasting Nuts. While the chocolate and butter are beginning to melt, it's time to toast the nuts. There are several ways to toast nuts, I did mine this time in the toaster oven. I just put 2-1/2 cups of chopped walnuts in a foil lined pan and set it for medium toasted.
  • Step 3 - Eggs Sugar Van in Bowl. In a mixing bowl, add 5 eggs, 3 cups of sugar and 1 tablespoon of vanilla. Mix for 10 minutes. It's not necessary, but this is one of the recipes that owning a stand mixer would come in handy.
  • Step 4 - Mixing Dry Ingredients. Mix 1-1/2 cups flour and 1 teaspoon of salt in a separate bowl with a wire whisk.
  • Step 5 - Melted Chocolate Mixture. Remove chocolate mixture from stove and set aside to cool slightly.
  • Step 6 - Egg Mixture. Many people have wondered why this recipe has no leavener such as baking powder or soda. There's not a need when the egg mixture gets this much volume from mixing it for 10 minutes.
  • Step 7 - Adding Chocolate. While the mixer is running slowly add the chocolate mixture to the egg mixture. If a stand mixer is unavailable, add the chocolate a little at a time between mixings.
  • Step 8 - Adding Flour. While mixing gradually add in the flour.
  • Step 9 - Hand Stir in the Nuts. Hand stir-in the nuts. Next, carefully put mixture into prepared pan for baking. Bake for 35 to 40 minutes. Do not over bake. Cool in pan on wire rack. Cut into squares. This recipe makes 24 to 30 squares, depending on how it's cut.
  • Step 10 - The Finished Product - Ultimate Brownies. 
  • These brownies could be frosted, but it's really not necessary. They are wonderful just as they are.
